Several popular fried foods are made with corn flour. It is used in corn and tortilla chips and is a component of several batter and breading systems. The cornmeal dough is fried directly as fairly thick scoop-shaped pieces for corn chips. Thinner tortilla chips are made from cornmeal that has been nixtamalized, an alkali treatment that aids in the breakdown of hemicellulose and affects the flavor and nutritional quality of the corn.
